Sometimes we get in a rut with dinners and are tired of eating the same things. That happens with breakfast too. So here is a recipe that I hope are new for you to try.
These are great to make the night before and just pop in the oven in the morning. Also great for unexpected company when you have nothing on had to fix and want something a little nicer than oatmeal.
Try making them during this cool winter months for a little more warmth in the house (Leave the oven door open after you turn it off and enjoy the extra warmth. Be careful for babies though!) and a nice cinnamonie smell!
Oatmeal Casserole
Mix Together:
2/3 c. Oil
1 c. Sugar
2 eggs
Add:
4 c. Oatmeal (can use quick or rolled or half and half)
1 T. Baking Powder
1 t. salt
1 1/2 c. milk
2 Chopped apples
1 t. Cinnamon
1 c. Raisins
1 c. Nuts (almonds, walnuts, pecans, etc.)
Bake at 350* for 30 minutes in a greased casserole dish. I think it taste even better prepared the night before. Makes a 9 x 13 inch.
Optional: Try different flavors and add ins. Some Ideas below. To mix in these you can omit the apples, raisins and nuts if you want
Cranberry with Orange rind
Dates or other dried fruit
Coconut
Flax seeds or other seeds
Berries
Vanilla
Apricots
Peaches
Grains cereals (bran, Millet, etc.)
Peanut butter
Spices (nutmeg, ginger, all spice)
Pumpkin
Banana
Maple Syrup
There are many of these I have never tried. But just use your imagination and what you have on hand!
This is great served with milk or yogurt and fresh fruit! Leftovers (if there are any) are just as good!
